Pumpkin Chili is the perfect cool-weather dinner and this recipe does not disappoint. My first attempt at making chili was more like a soup and my second attempt had the wrong ingredients. However, my third try was a hit with our family! Even two out of three kids liked it, so that is a win all around!
The best part of this pumpkin chili is that it is very easy to make! Pair it with a salad or bread, or both, and you have a delicious dinner for your family!
How to Make the Best Pumpkin Chili
Ingredients
- 1 tablespoon olive oil
- l pound ground turkey
- 1 can kidney beans
- 1 can chili beans
- 1 large onion diced
- 1 cup baby carrots, diced
- 3 garlic cloves, minced or chopped
- 1 (15 ounces) can pumpkin puree (not the pie filling)
- 2 cups Chicken Stock
- 2 tablespoons chili powder
- 2 tablespoons cumin
- 1 tablespoon oregano
- 2 teaspoon salt
Optional Toppings
- Shredded Cheese
- Sour Cream
- Green Onions
Directions for Pumpkin Chili
In a large soup pot, heat the oil and then add the ground turkey. Cook until meat is cooked through and then add onion and carrots. Cook until the veggies are tender. Add in garlic and cook until fragrant. I love using this garlic peeler to easily peel the garlic.
Add in the spices, mixing well.
Next, add in the canned pumpkin and chicken stock. Stir everything together and bring to a boil. Then reduce heat and simmer for 20 minutes. If it gets too thick, you can add more chicken stock. Top with toppings.
